Or, if you want to enjoy your glass of milk with honey before going to bed, make sure that the milk has cooled down reasonably before mixing in a spoonful of honey at room temperature. There is also a scientific reason why you shouldn't raise the temperature of honey. Heating anything that contains sugar can release a chemical called 5-hydroxymethylfurfural or HMF which is believed to be carcinogenic in nature.
The temperature increase allowed for honey is less than degrees which is much, much lower than your glass of hot milk.
